As universities expand online course offerings and GenAI models become increasingly available, the design of valid and reliable assessment strategies has become increasingly critical to ensure learning objectives are met. This session explores how the AI era presents both challenges and opportunities for instructors, particularly within large-enrollment courses where workload, feedback, and student engagement are ongoing concerns. Rather than focusing solely on restricting AI use, this presentation will examine how educators can redesign assessments to emphasize higher-order thinking, authentic application, reflection, and human-centered learning. Drawing on examples from Nutrition 10/10V: Discoveries and Concepts in Nutrition, attendees will explore practical strategies for adapting course design and assessment practices in ways that support student learning while responding thoughtfully to rapidly evolving technologies. Participants will leave with adaptable ideas for creating more engaging and meaningful learning experiences in the age of AI.
About the Presenter
Debbie Fetter is an Associate Professor of Teaching in the Department of Nutrition at the University of California, Davis. She teaches large-enrollment undergraduate courses and conducts research in the scholarship of teaching and learning, with a focus on assessment, educational technology, online learning, and student success. Her work evaluates evidence-based instructional practices that enhance student engagement and learning in higher education. Through her research and teaching, she aims to develop inclusive, transferable approaches that improve learning experiences and support diverse learners across higher education contexts.
